Baking Day





About every 10 days is baking day. Here is a Rhubarb cake, Melt-In-Your-Mouth Chocolate Chip Cookies, Brown Bread, (Receipes from BLUEBERRIES & POLAR BEARS,Webber's Northern Lodges, Our Most Requested Receipes. by Helen Webber and Marie Woolsey..... and canning jars full of Meatballs ready for hot beef Gravies and then into the canner.
MEATBALLS for 1 lb ground beef or moose = 1 canning quart
2 cupsBread Slices made into crumbs...can use Soda Crackers or Cornflakes
1/3 c Finely chopped green onions or chives
2 tbsp Milk
1 tbsp Fresh Parsley
2 Gloves Garlic minced
1 tsp salt and pepper
1/2 tsp Hot pepper sauce

Combine in large bowl, Mix well. Roll into 1 1/2 inch balls. Bake on greased cookie sheets in oven (400) for 15 min. Put in quart canning jars. Cover with Hot Beef Gravy and Pressure Cook in Canner for 1 hour and 15 minutes at 10 lbs Pressure.
PS I like the receipes in the Blueberries and Polar Bears cook book because they are common incredients...as I don't have a store to run to. And the food is fabulous!!!!

Wall Tenting IT

Soon we will be staying out on the trail in a wall tent at night surrounded by an electric fence. We are 5 km out from our cabin and it takes an hour and a half each way to get there by quad. I started getting camp food ready. These are meat balls you cook in the oven for 15 minutes than can in gravy. So nice to have supper ready quickly and no fresh meat left in camp while we are away making new trail. The other jars are moose meat that was in the freezer.... Now that summer is here the generator is hardly on at all so the freezer is empty until late fall when hopefully we get a moose.

Summer ....


After coming back from getting more supplies in Atlin we made trail for 3 weeks and because there is so much sun here at this time and we are outside all the time the generator was not on and so there was NO BLOGGING time. We flew out again to Atlin and shopped in Whitehorse for lots of little things to make repairs, make life easier here and start stocking up for winter supplies. Also had a full week of Doctors, Dentist and eye appointments. Got back here at King Salmon on July 17. The garden is really growing and we had also brought back some Salmon to can which Bryan had caught on a 3 day trip to the River. so We have been real busy. Just wanted to let you know we are safe and happy.
